I believe it was implied in HP canon that while the snitch generally decides the winner in school, professional quidditch matches tend to have much higher scores to the point that 150 points is just a nice boost, not a guaranteed win.
In the Quidditch World Cup computer game, I think I used to get such high scores as a chaser that even if the other team got the snitch, I could still win.
But then why wouldn’t you just wait until you had enough points to win to catch the Snitch tho…………………
If I remember correctly, they tally up points from previous games towards your final score. I’m not sure if that applies only to school cups or wider tournaments, though.
But I can’t math, so I don’t know if I’m making sense.

Actually, there is no previous scores added to your total when you start the game. The reason that there is the Quaffle is because the Snitch is ridiculously hard to catch; that’s why Seekers are the pitchers/quarterbacks/shooters of Quidditch teams. They have the hardest job that the smallest amount of people can do. So while, yeah, the ideal is to catch the Snitch first, it’s extremely hard to find it and then catch it. That’s why it’s what ends the match. If it were easy and anyone could do it, the matches would be over in a flash.
If you remember in the World Cup match in book… Four? @_@;; Anyway, in the World Cup, Ireland won even though Bulgaria (via Krumm ) caught the Snitch because their Chasers were just trouncing the other team and had a lead of greater than 150 points. One of the characters even asks why Krumm even bothered to catch the Snitch when his team was down by so much and Harry points out that there was no way the Bulgarians were going to be able to get enough points to win, even with the Snitch, so he just wanted to cut their losses.
Because a good set of Chasers can just destroy a team and make the Snitch effectively pointless, there’s also the strategy to have your own Seeker run interference to the other Seeker to give your team the chance to wrack up as many points as possible. Again, I think Krumm did that in the World Cup match as well.
